Can you tell us about your business?

I'm passionate about vanilla! I am a preparer and exporter of Bourbon vanilla in Madagascar as well as a manufacturer of extracts in France. My company is called Casa Vainilla, which means "Maison Vanille" in Catalan in homage to my Perpignan origins.

Where do you practice and for how long?

I work in Madagascar and France, but I spend most of my time in Madagascar. I founded Casavainilla SARL in 2018 with my wife, in Antalaha, the vanilla capital, where we prepare our Bourbon vanilla.

Since 2020, I have also been based in France, near Perpignan, where I created Casavainilla SASU to import our production of Bourbon vanilla from Madagascar, as well as other varieties of vanilla from all over the world. We then manufacture several derivatives, such as vanilla extract, vanilla sugar, pearl and vanilla paste, to offer them to professionals who are passionate about quality natural products.

What is your background ?

I was born in Perpignan, in a family of restaurateurs, and I have always been passionate about cooking. When I was 17, I started a culinary BEP in Paris, at the CFA Médéric and at the restaurant La Tour D'Argent, where I discovered French gastronomy. After my apprenticeship, I worked as a seasonal worker in various palaces in France, in St Tropez, Courchevel and in Corsica, where I gained experience with a great chef. The palace that impressed me the most is the palace les Airelles in Courchevel, where I worked on breathtaking products! I traveled every off-season and fell in love with Madagascar and its unique flora. Over time, I had opportunities to get closer to vanilla and I ended up founding Casavainilla SARL in 2018. After 4 years, I officially became a producer, preparer and exporter of Bourbon vanilla in Madagascar. In 2020, I created Casavainilla SASU in France to import our production of Bourbon vanilla from Madagascar and manufacture several vanilla derivatives but above all to diversify our products by importing vanilla from all over the world.

What is your degree?

I obtained a BEP in cooking, but for me, cooking is above all a school of life. She taught me rigor, determination, organization, humility, solidarity, perfectionism, respect for products, love of sharing, qualities that help me a lot today to excel in my domain.

What is   your flagship product?

My flagship product is the Bourbon vanilla bean, it is the base of all our products, it is with it that I started and we are proud of its exceptional quality.

 

What is the best vanilla? Are they similar?

For me, there is no vanilla better than another. Each vanilla has its own unique flavor, appearance, smell, tastes and characteristics that cannot be compared. It all depends on the personal taste of each individual. However, we can compare vanillas of the same species based on their quality, which is directly related to how they are grown, harvested and prepared. Vanilla is like ice cream, even if two ice cream parlors use the same vanilla, the final taste will depend on their know-how. 

 

Why did you choose to do this job?

By chance and then by passion. I love adventure and vanilla, its subtlety fascinates me. I find that working in contact with nature is essential to feeling alive. It's a feeling I couldn't trade for anything else.

What passions drive your work?

There areseveral, there are  the passion for creating unique flavors and smells to share them with enthusiasts around the world is what drives us. To satisfy our customers and help them take pride in using our vanilla in their culinary creations.

But the biggest is the belief that we can make a difference in the lives of our producers by helping them reach their full potential. By working with them, we can contribute to their growth and development, which positively impacts their lives and that of their community. It is this opportunity to make a meaningful difference that inspires me to pursue my passion.

 

What are you looking to achieve in yourwork again?

We seek to educate the passionate professionals of our existence to pass on our know-how to them through our quality products. We offer them a great opportunity to discover and work with exceptional products.
